Made with lashings of fruit soaked in French Brandy.

A lighter fruit cake alternative flavoured with cinnamon and mixed spice

Cake Coverings
Fruit cakes are covered with a layer of white marzipan and a layer of fondant icing
All layer cakes are covered in fondant icing
Sharp edged cakes are given a crumb coat of white or milk chocolate ganache before covering in fondant icing.
